Menemen is a Middle Eastern delight! This recipe is typically served over breakfast but can be taken whenever, owing to its quick and easy method. It is light on the palate and combines the goodness of eggs with veggies, very similar to Shakshuka.
Try this exotic diversion over your next Sunday brunch!

Ingredients:
Serves 1
2 eggs
1 tsp olive oil
1/2 onion, finely chopped
2 tbsp chopped red capsicum
2 tbsp chopped yellow capsicum
1 large mild green chilli
2 tomatoes, finely chopped
1/2tsp salt
1/4 tsp black pepper powder
1/2 tsp Italian mixed herbs

Method:
Step 1: Heat olive oil in a small non-stick pan. Sauté the onions till they turn translucent.
Step 2: Add the red and yellow capsicums, and green chilli. Mix for a minute.
Step 3: Toss in the tomatoes and cook on low flame for about 5 minutes. Mix till the tomatoes just turn mushy.
Step 4: Make little spaces in the pan; crack and add the eggs. Add salt and black pepper powder. Cover and cook for 2 minutes.
Step 5: Mix the eggs with the rest of the mixture. Garnish with Italian mixed herbs and serve hot!
