Jerk Chicken is a hot Jamaican appetiser. The term Jerk’ refers to the style of making this chicken recipe. Here, the chicken pieces are marinated by inserting the spice marinade into chicken portions really well. The emphasis, in this recipe, is on the marination that essentially brings alive the flavours after the chicken is grilled.
Jerk Chicken is a spicy affair on the palate where the key ingredient is the allspice powder and Scotch bonnet peppers. Here, I have replaced the latter with the chillies in my larder and tried to recreate this recipe. Trust me it turned out to be as good as the original!

Ingredients:

Serves 2
300g chicken, medium cut
2 tbsp olive oil
1/2 tbsp ginger-garlic paste
1 small onion, chopped
4-5 green chillies, chopped
1 tsp allspice powder
1/2 tsp clove powder
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder
1 tsp red chilli powder
1/2 tsp salt
1/2 tsp black pepper powder
1 tsp brown sugar
1/2 tsp soya sauce
1 tsp dry Italian mixed herbs
Juice of 1 lemon

Method:
Step 1: Make a paste of the onions and green chillies in a mixer. Mix together with the ginger-garlic paste. Set aside.
Step 2: Marinate the chicken pieces with the above mixture along with allspice powder, clove powder, cinnamon powder, nutmeg powder, red chilli powder, salt, black pepper powder, brown sugar, soya sauce, dry Italian mixed herbs, lemon juice, and 1 tbsp olive oil for at least 2 hours.
Step 3: Heat 1 tbsp olive oil in a grill pan. On high flame, add the marinated chicken and grill for 5 minutes on each side. Keep turning at regular intervals to get a charred crust. Make sure it doesn’t burn. Check for doneness.
Step 4: Remove from the grill. Serve hot with lemon wedges!
