Banoffee Pie, is a classic British dessert recipe. It is made from layers of whipped cream, bananas, and toffee; condensed milk is boiled to form toffee and the base of the pie is made from digestive biscuits. All the above ingredients are layered and refrigerated; it tastes best when chilled. Hence, Banoffee Pie can safely fall into the no-bake category of cakes and pies.
It is Christmas tomorrow and what better way than to celebrate it with some easy yet exotic dessert. Banoffee Pie is simple to assemble although the pre-preparation takes some time. But then, special occasions call for special recipes, right!
So read on carefully and try making this yummilicious dessert and ring in the festive season!
250g digestive biscuits
400g condensed milk
4 medium bananas
Chocolate bar for shavings
Step 1: Immerse the sealed can of condensed milk in a pan filled with water. Note that the can should be completely immersed in the water. Put it on flame and allow the water to boil on high heat.
Step 2: Once the water starts to boil, lower the heat and simmer the water for 2 hours. Take note that the water level should at all times be above the can. If the water level decreases, boil water separately and refill the pan.
Step 3: After about 2 hours, switch off the heat and remove the can out of the pan with a pair of tongs. Allow it to cool for about 30-45 minutes. Your toffee is ready. Empty the content into a bowl and set aside.
Step 4: Melt butter in the microwave/pan. Set aside.
Step 5: Take the digestive biscuits in a ziplock bag. Seal it and crush the biscuits to a fine powder with a rolling pin. Alternatively, you can grind them in a mixer.
Step 6: Empty the biscuit powder in a large bowl and add the melted butter to it. Whisk them well.
Step 7: Grease a cake tin with 1 tsp butter. Add the above contents to it and make a base with a spatula/spoon. Refrigerate for 30 minutes.
Step 8: Meanwhile, whip the cream in a bowl with a whisker for about 25-30 minutes till it starts to form soft peaks. Cover it with a plastic wrap and refrigerate for 30 minutes.
Note that the whisker, bowl, and cream should be chilled before whipping.
Step 9: Layer the toffee evenly over the biscuit base.
Step 10: Cut the bananas in your preferred shape and add a layer over the toffee layer.
Step 11: Now, add a layer of the whipped cream with a spatula or a piping bag.
Step 12: Garnish with chocolate shavings and refrigerate for 1 hour. Cut into slices and serve chilled!
