Poro is a delightful breakfast option from the Parsi cuisine. It combines a variety of veggies and is extremely high on nutrition!
It is a typical Sunday breakfast recipe in any Parsi household. And makes for a great variation of an omelette routine.
Poro, is also simple in preparation with easily available ingredients. It is savoury and mildly spicy on the palate.

Serves 2
3 tbsp vegetable oil
1 onion, finely chopped
1/2 tsp roasted cumin powder
1 garlic clove, crushed
2 green chillies, finely chopped
Few sprigs of coriander, chopped and few to garnish
1 tomato, chopped
1 small potato, cubed and boiled
1/4 cup peas boiled with pinch of salt
1/4 cup sweet corn boiled with pinch of salt
2 eggs, whisked
1/4 cup grated cheese
Salt and pepper to taste

Step 1: Heat 1 tbsp oil in a pan/wok/skillet and add the onion, roasted cumin powder, garlic, chillies, coriander, tomato, potato, peas and sweet corn. Mix well. Cook over medium heat until the veggies are tender. Add salt and pepper. Check and adjust the seasoning.
Step 2: Make spaces in the mixture in the pan and add 2 tbsp oil in it. On medium heat, add the whisked eggs and spread it across the pan.
Step 3: Let it cook for 5 minutes, sprinkle the cheese and turn over the omelette on the other side. Add little oil on the sides if the base sticks to the skillet. Cook for another 5 minutes on low heat.
Step 4: Remove from heat and serve hot garnished with coriander leaves. Provides a great start to the day!
