Gajar Halwa

Gajar Halwa, a quintessential reminder that the winters have arrived in India! This dish originated in the Indian subcontinent during the Mughal era and is a popular dessert here even today. It essentially combines the sweetness of the seasonal vegetable- red carrots -with milk, sugar, and ghee or clarified butter. However, you can adjust the level of sweetness as per your preference. Garnished with nuts of your choice it can be served hot or at room temperature.
Gajar Halwa is a must-make recipe at my home in winter. It oozes comfort and just melts in your mouth! So you must try this extremely easy Indian delight before the season ends!

Serves 8
20 medium red carrots
6 tbsp melted ghee
200g khoya, grated
1 cup milk
3/4 cup sugar
1 tbsp green cardamom powder
1 pinch saffron in 1/4 cup warm milk
20 raisins
20 almonds, toasted and sliced
20 cashew nuts, toasted and sliced

Step 1: Wash and grate the carrots in a large bowl. Set aside.
Step 2: Heat 4 tbsp ghee in a large karahi. On high heat, add the grated carrots and mix for about 10-15 minutes till the raw smell of the carrots evaporates and they become soft in texture.
Step 3:  Now add milk and mix. Cook on medium to low heat for about 30 minutes, occasionally stirring in between, till the oil begins to separate. Add the saffron milk and mix for a minute.
Step 4: Drizzle the remaining 2 tbsp ghee and add the grated khoya and sugar. Mix everything for about 10 minutes so that it is incorporated well. Add the green cardamom powder. Check and adjust the sweetness.
Step 5: Remove from heat and garnish with raisins, almonds, and cashew nuts. Serve hot!
