Egg Lava is a unique street food that I discovered in the bylanes of Bihar. It is a popular Bihari snack that goes by the local nomenclature of ‘Fried Poach’. Egg Lava is my personal rendition of this droolworthy appetiser! This dish combines the hot chilli flavours with the gooey egg yolk and voila! you have lava eruptions right on your palate!
A brilliant, easy-to-make recipe that can be eaten at breakfast or as an evening snack, this fiery, volcanic receipt is my eureka formula! Let me know how it works for you! 😉

Ingredients:
Serves 1
2 eggs
1 tbsp butter/oil
1 tbsp chopped onion
1 tbsp chopped tomato
1 tsp chopped green chillies
1 pinch salt
1 pinch black pepper powder
1 pinch chaat masala powder
1 pinch oregano flakes

Method:
Step 1: Heat butter/oil in a large ladle. Quickly crack the eggs and add them directly into the butter one after the other.
Step 2: Reduce heat and add the chopped onion, tomato, green chilli, salt, black pepper powder, chaat masala powder and oregano flakes on top of the eggs.
Step 3: Scrape the sides of the eggs and with the help of a table spoon, quickly turn it upside down in the ladle.
Step 4: Let it cook on low flame for another minute. Switch off the heat and transfer it in  a bowl with the veggies on top. Serve hot; this time, you would not require anything else!
