Ratatouille is a classic French dish that I absolutely loved making! It is a beautiful recipe that is very summery in character and amalgamates savoury flavours of fresh, healthy vegetables. So a big thumbs up on the nutrition quotient!
This exotic dish also caught the fancy of moviemakers and consequently we have an animated movie with same name as well! The movie shows Ratatouille recipe in an altogether new light presentation-wise, that is a visual treat in itself; it is an instant hit among mothers who have trouble making their children eat vegetables!
So all the more incentive to go ahead and try making this easy-to-make, yummy recipe! You may serve it as a side dish or have it as a meal in itself with bread of your choice!
Here in my rendition of Ratatouille, I am combining the original recipe with the contemporary presentation method given in the movie! Let me know your feedback!

Ingredients:
Serves 4
1 large onion, finely chopped
1 tbsp crushed garlic
2 tbsp mixed herbs
1 yellow capsicum, finely chopped
1 red capsicum, finely chopped
250g tomatoes, finely chopped
1 tbsp tomato sauce
1 tsp red chilli powder
1 tsp black pepper powder
1 tsp salt
2 tbsp oil
1/2 cup water
1 medium zucchini, finely sliced
1 tomato, finely sliced
1 long green brinjal, finely sliced
1 long purple brinjal, finely sliced
1 tsp olive oil
1 garlic clove, crushed

Method:
Step 1: Heat oil in a pan. Add the garlic, onion and mixed herbs. Add the tomatoes, red capsicum, yellow capsicum, tomato sauce, salt and pepper powder. Mix all the ingredients well. Cover and cook on medium heat for 10 minutes. Add water and stir. It should get a saucy texture. Let it cool for 5 minutes.
Step 2: Grind the above mixture to a paste. Set aside.
Step 3: Pour the above paste in a baking tray. Let it set evenly.
Step 4: Start placing the sliced zucchini, tomato, purple and green brinjal in a repetitive pattern resulting in a visually appealing arrangement.
You may combine any number of veggies of your choice.
Step 5: Sprinkle a pinch of salt. Cover and cook in a microwave on Micro High for 6 minutes.
Step 6: Mix olive oil, crushed garlic clove and 1 tsp mixed herbs in a bowl. Spread this mixture over the cooked veggies. Your Ratatouille is ready! Serve hot!
