Schezwan or Sichuan recipe is a popular Chinese cuisine specialty. Here, the recipes are made in a typical sauce called the Schezwan sauce, which is an extremely spicy and pungent chilli-garlic paste. It is readily available in the markets as well. However, here I am making it at home in this recipe. You can make and store the paste for future use as well.
This gives the rice a nice, spicy and chilli twist and with the veggies added, it is a meal in itself. Check it out!


Schezwan sauce
Ingredients:
Makes 1 large bowl
2 tbsp oil
20 garlic cloves, finely chopped
1 tbsp chopped ginger
15 dry red chillies, soaked in water for 30 minutes
1 tsp salt
1/2 tsp black pepper powder
1/2 tsp black soya sauce
1/2 tsp sugar
1/2 cup water
1/2 tsp vinegar

Method:
Step 1: Grind the soaked red chillies to a fine paste.
Step 2: Heat oil in a wok. Add the garlic, ginger and sauté until golden brown.
Step 3: Add the red chilli paste and mix well, till the oil separates.
Step 4: Add the salt, black pepper powder, black soya sauce. Mix well.
Step 5: Add the sugar and water. Lastly, add the vinegar. Stir well. Check seasoning. Store in a cool place for further usage.


Schezwan Fried Rice
Ingredients:
Serves 6
2 cups rice, soaked in water for 30 minutes
1 onion, finely chopped
1/4 cup green capsicum, finely sliced
1/4 cup red capsicum, finely sliced
1/4 cup yellow capsicum, finely sliced
1/4 cup French bean, finely chopped
1/4 cup carrot, finely sliced
1/2 cup cabbage, shredded
2 tbsp oil
1 tsp ginger-garlic paste
1 tbsp Schezwan paste
1 tsp salt
1/2 tsp black pepper powder

Method:
Step 1: Boil the soaked rice. Do not over cook it.
Step 2: Heat oil in a wok. Add the ginger-garlic paste, onions and sauté till golden brown.
Step 3: Add the carrots, French beans and stir for a minute.
Step 4: Add the green, red and yellow capsicums and cabbage and mix well.
Step 5: Add the Schezwan sauce. Check seasoning. If required, add salt and black pepper powder.
Step 6: Add the boiled rice and gently mix it all up for a minute. Your Schezwan Fried rice is ready. Serve hot!
